Apple or pear rissoles
Presentation
• 400 g short crust or puff pastry
• 2 kg apples or pears
• 200 g sugar
• 2 glasses of water
• 1 teaspoon cinnamon
• icing sugar

Peel and core the apples or pears.
Simmer them for 45 minutes in the water, sugar and cinnamon.
Roll out the pastry and cut it into rectangles measuring approximately 20 cm by 10 cm.
Place a soup spoon of stewed fruit in the middle of each rectangle, folding over and sealing the edges of the pastry with water.
Glaze with egg yolk and bake in a hot oven for 15 minutes. Sprinkle with icing sugar after removing from the oven.
